We’ve probably all enjoyed one of those fast food breakfast sandwiches while on the go. You know the ones… Sure they’re delicious…but nutritious? Maybe not. I used my little waffle iron to create a fun homemade alternative. This recipe is really fun and easy. In fact, the hardest part is to stop yourself from snacking on the waffles as you make them.

Here’s what you’ll need:

  • A box of Pancake/waffle mix of your choice
  • About 6 eggs (4 for the egg waffles and more eggs for the waffle mix)
  • Milk, butter, oil and whatever other your waffle mix calls for to make the batter
  • Canadian bacon or breakfast sausage patties (about 4-6 slices/patties)
  • About ½ cup of shredded cheese of your choice – I used cheddar
  • Salt and pepper

Let’s get started. The sooner we do, the sooner we can eat!

  1. Make your waffle batter according to the directions on the box.
    PRO TIP: I put my waffle maker on top of a flat silicon trivet because it makes it easier to clean up the drips and splats of waffle batter.
  2. Now for the fun part…making the waffles. Plug your waffle iron in and let it warm up. Once it makes the little click noise and the light changes, pour a small amount of batter into the waffle iron. I poured a little less than ¼ cup of batter for each waffle. Close the lid and wait for the click and light change. Use a rubber spatula to ease your tiny waffle out of the waffle maker and onto a plate. Now repeat this until you run out of waffle batter. Making waffles takes a while, but it’s part of the fun.
    PRO TIP: Mind where you put your fingers, the waffler is HOT!
  3. Next, cook your Canadian bacon or sausage patties. I sautéed my bacons for about a minute per side in a nonstick pan to warm them up and get a little caramelization on them – yum.
  4. Once your waffles and Canadian bacon are done, keep your waffler plugged in because we’re going to use it to make the egg waffles, next. I planned for 1 egg per waffle sandwich and I had about 4 sandwiches. I scrambled the eggs, stirred in some shredded cheddar cheese (it helps hold the egg waffle together) and season to taste with salt and pepper. Feel free to experiment with whatever cheese or seasonings you prefer.
  5. Now we use the egg mixture just like the waffle batter. Pour a little less than 1/8 of a cup of egg mixture for each egg waffle. At first this will seem like it’s not enough, but just wait. As the egg cooks it fluffs up, A LOT.
  6. Once you finish all your egg waffles, you’re ready to start assembling your Breakfast Waffle Sandwiches. It’s like making a sandwich, but with waffles instead of bread and egg Frisbees and Canadian bacon filling.
  7. Finally, the part we’ve all been waiting for, We get to eat with all of our friends! I also wrapped up some of my Breakfast Waffle Sandwiches in foil to freeze for later. Yum.
